The perfect Chocolate Chip Cookies: crunchy on the edges and chewy in the middle!

Ingredients
- 125 gms butter softened, ½ cup
- 110 gms caster sugar
- 1 pinch salt
- 90 gms brown sugar very firmly packed, 1/3 cup plus 2 tsp
- ½ tsp vanilla extract
- 1 egg large
- 100 gms self-raising flour 2/3 cup
- 150 gms plain flour 1 cup
- 200 gms chocolate chips I use dark chocolate, but feel free to use your favourite kind, 1 cup
Notes
- Once the cookies have cooled to room temperature, you can store them in an airtight container.
