Chocolate Chip Croissant Bread Pudding

This Chocolate Chip Croissant Bread Pudding combines torn croissants with melted butter and semisweet chocolate chips, soaked in a custard of half & half, sugar, eggs, egg yolks, vanilla, and a pinch of salt. After soaking, it’s baked until golden with a brown sugar topping and served with a coffee-vanilla powdered sugar glaze. The pudding offers a rich, moist texture with sweet chocolate notes and a crisp sugary surface.

Description

Starting with cubed croissants coated in melted butter and mixed with chocolate chips, this bread pudding uses a custard base made from half & half, sugar, eggs, yolks, vanilla extract, and salt to soak the bread. Allowing the cubed croissants to stand in the custard for 30 minutes helps absorb the liquid thoroughly, enhancing moisture and richness. A sprinkling of dark brown sugar atop the pudding before baking adds a caramelized, crunchy finish.

The pudding is baked in a buttered dish until golden and fully set in the center, about one hour. The final step includes drizzling a powdered sugar glaze flavored with coffee and vanilla, which adds sweetness and a subtle aroma that complements the chocolate.

This recipe is flexible, allowing substitutions such as using different types of milk or adding raisins instead of chocolate chips. It can be served warm, making it a comforting dessert or brunch item.

Ingredients

Servings
  • 1 pound croissants torn into 1-inch cubes
  • 8 tablespoons unsalted butter Land O Lakes brand, melted
  • 1 cup semisweet chocolate chips
  • 2 ½ cups half & half Land O Lakes brand
  • 1 cup white sugar
  • 4 egg large
  • 4 egg large yolks
  • 2 tablespoons vanilla extract
  • ¼ teaspoon kosher salt
  • 2 tablespoons dark brown sugar

Powdered Sugar Glaze

  • 2 cups powdered sugar
  • 2-4 tablespoons milk
  • 1 teaspoon coffee extract
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. Butter 13x9-inch baking dish. Place croissants in large bowl; pour 8 tablespoons melted butter over croissants and toss to coat. Add chocolate chips and toss to combine. Transfer mixture to the prepared dish.
  3. Whisk half & half, 1 cup sugar, eggs, egg yolks, vanilla extract, and salt in large bowl to blend. Pour over croissant cubes in dish. Let stand 30 minutes, occasionally pressing bread cubes into liquid. Sprinkle the top with brown sugar. Bake bread pudding until golden brown, and set in center, about 1 hour. Serve warm with glaze drizzled on top.
  4. To make the glaze, combine everything together and whisk until smooth.

Notes

  • Substitute half & half with any milk you have available for similar results.
  • Optional additions include raisins either in place of or alongside the chocolate chips.
  • Letting bread cubes soak about 30 minutes helps them absorb the custard fully for moist pudding.
