Chocolate Chip Granola

This Chocolate Chip Granola recipe mixes rolled oats with a sweet blend of maple syrup, brown sugar, vanilla, and vegetable oil before baking until lightly browned and compact. Chocolate chips baked into the granola add sweet bursts amid the toasted oat clusters, offering a textured, crunchy treat. It stores well at room temperature, making it convenient for breakfasts or snacks.

Description

The Chocolate Chip Granola consists of rolled oats coated in a syrup-sugar-vanilla-oil mixture that holds the ingredients together during baking. Baked at a moderate temperature until lightly browned, the granola develops a crisp texture with some chewiness inside compact clusters thanks to pressing the mixture firmly on the baking sheet. Chocolate chips dispersed through the granola provide sweet, melty pockets mixed with the toasted oats.

This granola makes an easy snack or breakfast topping served with yogurt or milk. The combination of maple syrup and brown sugar contributes natural sweetness and a touch of molasses flavor that complements the vanilla. The recipe yields multiple servings and keeps for up to two weeks if stored airtight at room temperature.

Breaking the cooled granola into chunk sizes allows customization of bite size and texture preference. The recipe balances sweetness and crispness without excess oiliness or clumpiness.

Ingredients

Servings
  • cup pure maple syrup
  • cup light brown sugar
  • 4 teaspoons vanilla extract
  • ½ teaspoon salt
  • ½ cup vegetable oil
  • 5 cups rolled oats old-fashioned
  • 2 cups chocolate chips

Instructions

  1. Adjust oven rack to upper-middle position and preheat oven to 325 degrees F. Line a rimmed baking sheet with parchment paper; set aside.
  2. In a large bowl, whisk together the maple syrup, brown sugar, vanilla extract and salt. Whisk in the vegetable oil to combine. Add the oats and chocolate chips and fold the mixture together with a rubber spatula until all of the oats and chocolate chips are thoroughly coated.
  3. Turn the oat mixture onto the prepared baking sheet and spread into a thin, even layer. Using a stiff metal spatula, compress the oat mixture until very compact.
  4. Bake until the top is lightly browned, 40 to 45 minutes, rotating the sheet halfway through baking. Remove the granola from the oven and let cool on a wire rack to room temperature, about 1 hour. Break the cooled granola into pieces as large or as small as you like. The granola can be stored in an airtight container at room temperature for up to 2 weeks.

Notes

  • Press the oat mixture firmly onto the baking sheet to create clusters during baking.
  • Let granola cool completely before breaking into pieces to maintain texture.
  • Store granola in an airtight container at room temperature for up to two weeks.
  • Adjust chocolate chip quantity as preferred for more or less sweetness.
