  • 2 c. all-purpose flour
  • ½ c. granulated sugar
  • 3 tsp baking powder
  • ½ tsp salt
  • 1 c. mini chocolate chips
  • 1 c. milk
  • ½ c. vegetable oil
  • 2 egg lightly beaten
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 425 degrees F.
  2. Combine flour, sugar, baking powder, salt, and chocolate chips and stir.
  3. Add your milk, vegetable oil, eggs, and vanilla to the dry ingredients. Gently stir until dry ingredients are moistened. Don’t overmix. It is okay to have lumpy batter.
  4. Pour batter into lined muffin tins until about 2/3rds full (I used an ice cream scoop for this step)
  5. Place in preheated oven for 5 minutes. Reduce heat to 350 degrees F and continue baking 15-18 minutes or until golden brown and a toothpick comes out clean.
