Description
This recipe mixes dry ingredients including flour, sugar, baking powder, salt, and mini chocolate chips with wet ingredients of milk, vegetable oil, beaten eggs, and vanilla extract. The batter is stirred just until combined to avoid overmixing which can create dense muffins. Using an ice cream scoop to portion ensures even muffin sizes.
Baking begins at a high temperature (425°F) for 5 minutes to help rise, then continues at 350°F until fully cooked and golden brown. The muffins are done when a toothpick inserted comes out clean, indicating a moist yet fully baked interior.
These chocolate chip muffins are convenient for breakfast or snacks and can be served warm or at room temperature. The mini chocolate chips disperse small bursts of sweetness without overwhelming the texture.
Ingredients
- 2 c. all-purpose flour
- ½ c. granulated sugar
- 3 tsp baking powder
- ½ tsp salt
- 1 c. mini chocolate chips
- 1 c. milk
- ½ c. vegetable oil
- 2 egg lightly beaten
- 1 tsp vanilla extract
Instructions
- Preheat oven to 425 degrees F.
- Combine flour, sugar, baking powder, salt, and chocolate chips and stir.
- Add your milk, vegetable oil, eggs, and vanilla to the dry ingredients. Gently stir until dry ingredients are moistened. Don’t overmix. It is okay to have lumpy batter.
- Pour batter into lined muffin tins until about 2/3rds full (I used an ice cream scoop for this step)
- Place in preheated oven for 5 minutes. Reduce heat to 350 degrees F and continue baking 15-18 minutes or until golden brown and a toothpick comes out clean.
