  • 1.5 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons sugar granulated white
  • 1.25 cups milk
  • 1 egg
  • 2 tablespoons butter melted
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Mix flour, baking powder, salt, and sugar in a large bowl
  2. In another bowl, whisk together the milk, egg, butter, and vanilla.
  3. Add the milk mixture to the flour mixture, and stir until the batter is JUST combined (see notes).
  4. Add the chocolate chips and gently fold to combine.
  5. Heat a large non stick griddle or skillet over medium heat, and grease lightly with butter.
  6. Pour 1/2 cup batter into circles.
  7. Flip once bubbles appear and sides are lightly golden brown.
  8. Serve with butter and maple syrup.
  9. Devour.

Notes

  • Avoid over-mixing the batter as it can cause tough, rubbery pancakes; small lumps are acceptable.
  • Use a pastry brush with melted butter to lightly grease the skillet for even coating and flavor.
  • For mini pancakes, use a 1/4 cup measure to create smaller portions and serve several per plate.
