Ingredients

Servings
  • 1 cup old fashioned oats 80g
  • 1/4 cup protein powder I used PEScience (code Laurenfitfoodie to save 10%, vanilla, 31g
  • 1/4 cup canned pumpkin 60g
  • 1/4 cup nut butter I used American Dream (code Laurenfitfoodie to save 10%, drippy, 56g
  • 2 Tbsp pancake syrup can sub for pure maple syrup, sugar free, 30g
  • 1 Tbsp chia seeds 12g
  • 1 Tbsp sweetener I used Swerve, of choice, 12g
  • 2 tsp cinnamon
  • 2 Tbsp chocolate chips mini, 30g
  • Pinch salt

Instructions

  1. Add all the ingredients (except the chocolate chips) to a food processor and mix until all ingredients are combined well. Fold in the chocolate chips.
  2. Use a small cookie scoop to scoop out 16 balls (about a heaping tablespoon in size), or however many you wish. After scooping, roll into balls with your hands. You can dampen your palms with a little water or nonstick spray to help prevent sticking.
  3. Keep stored in an airtight container in the fridge.

Notes

  • To make vegan: sub pancake syrup for pure maple syrup; use a plant-based protein powder, ensure your chocolate chips are dairy-free.
