Chocolate Chip Ricotta Pancakes

Chocolate Chip Ricotta Pancakes are fluffy, rich pancakes made by incorporating ricotta cheese and buttermilk into the batter, producing a tender texture and subtle tang. Mixed chocolate chips add bursts of sweetness throughout each pancake. These pancakes cook to a golden brown and are finished with powdered sugar, maple syrup, extra chocolate chips, and optional whipped cream for a classic breakfast or brunch treat.

Description

The recipe combines whole milk ricotta cheese, buttermilk, eggs, vanilla, and sugar to form a creamy batter. Flour, baking powder, salt, and chocolate chips are folded in gently to maintain the batter's lightness. Cooking on a buttered, medium-heat skillet creates golden pancakes with a tender crumb and soft interior. Lowering the heat as needed prevents over-browning before pancakes are fully cooked inside.

Once cooked, pancakes are dusted with powdered sugar and drizzled with maple syrup. Additional chocolate chips and a dollop of fresh whipped cream can be added to enhance flavor and presentation. The ricotta contributes moisture and mild tang balancing the sweetness.

This recipe suits breakfast or brunch occasions requiring a richer pancake with chocolate flavor and a soft, fluffy texture. The method allows easy control of cooking heat to ensure pancakes cook evenly without burning.

Ingredients

  • 2 cups ricotta cheese (preferably Whole Milk Ricotta)
  • 1 1/2 cups buttermilk
  • 4 large egg
  • 1 1/2 teaspoons vanilla
  • 1/2 cup + 1 Tablespoon sugar
  • 2 cups flour
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups chocolate chips (plus more for garnish)
  • powdered sugar
  • Whipped Cream
  • maple syrup

Instructions

  1. In a large bowl, mix ricotta cheese, buttermilk, eggs, vanilla, and sugar until combined. Heat skillet over medium heat.
  2. Fold in flour, baking powder, salt, and chocolate chips and stir until just combined, avoiding over-mixing.
  3. Place a pat of butter onto the skillet and wait for it to sizzle. Pour batter in 1/2 cup portions and cook until golden brown on each side. Lower the heat if the outside is becoming too brown before the inside is cooked through.
  4. Sprinkle with powdered sugar. Drizzle with maple syrup. Sprinkle with chocolate chips and a dollop of fresh whipped cream, if so desired.
