Chocolate Covered Trail Mix Peanut Butter Balls
Description
Chocolate Covered Trail Mix Peanut Butter Balls blend rolled oats, creamy peanut butter, raisins, chopped nuts or seeds, and optional shredded coconut. The mixture is formed into tablespoon-sized balls and frozen briefly to firm up. After chilling, each ball is dipped in melted semi-sweet chocolate and optionally topped with sprinkles or finely chopped nuts before setting again. These no-bake treats balance creamy, chewy, and crunchy textures with a chocolate coating providing a rich finish.
The nut and seed mix can be customized to personal preference, allowing flexibility in flavor and texture. The combination of oats and dried fruit contributes chewiness and natural sweetness, while the chocolate adds a familiar dessert element. These balls are suitable for quick snacks or on-the-go energy offerings.
Store any leftovers in an airtight container in the refrigerator for up to five days to maintain freshness and prevent melting of the chocolate coating.
Ingredients
- 1 cup rolled oats old-fashioned
- ½ cup peanut butter creamy
- ¼ cup raisins
- 2 tablespoons nut or seeds, chopped, user favorite
- 2 tablespoons coconut optional, shreds
- 1 semi-sweet chocolate chips
- Sprinkles optional, or finely chopped nuts
Instructions
- Add all the old-fashioned rolled oats, creamy peanut butter, ¼ cup raisins, chopped nuts or seeds, and coconut shreds (if using) to a large bowl. Using your hands, mix together thoroughly.
- Roll the mixture into small balls with your hands, making each about the size of a tablespoon. Place the balls on a baking sheet with a silicone mat or parchment paper.
- Put the baking sheet into the freezer for 30 minutes.
- After the trail mix balls are removed from the freezer, melt the chocolate in the microwave or double boiler and stir until smooth. Dip each ball into the melted chocolate until completely covered, and place them back on the baking sheet. If using, add sprinkles or finely chopped nuts on top of the melted chocolate.
- Eat immediately, and store any remaining Trail Mix Peanut Butter Balls in an airtight storage container in the refrigerator for up to 5 days.
Notes
- The oats, nuts, raisins, and peanut butter provide a chewy and nutty base, customizable by varying nut or seed types.
- Freeze the balls before dipping in chocolate to help them firm up and maintain shape during coating.
- Store the finished balls in an airtight container in the fridge for up to 5 days to keep texture and prevent melting.
