Description

The coconut oil, honey, cocoa powder, vanilla extract, salt, and cinnamon are mixed into a smooth chocolate paste that evenly coats oats and flaxseeds. Baking at 275°F for nearly an hour, with a stirring halfway, allows the granola to dry and crisp slowly, preserving chocolate flavor and creating a crunchy texture.

Once removed from the oven, chopped dark chocolate is sprinkled over the hot granola and gently stirred to form small chocolate clusters without melting fully into the oats. After cooling, the granola becomes crisp and ready to store.

  • 4 cups rolled oats
  • ½ cup flaxseeds
  • cup coconut oil melted
  • cup honey
  • 5 tablespoon cocoa powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 cup dark chocolate chopped

Instructions

  1. Preheat oven to 275°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the coconut oil, honey, vanilla, cocoa powder, salt and cinnamon. Stir until a smooth paste forms.
  3. Fold in the oats and flaxseeds. Mix until all the chocolate paste is well distributed and coats all the oats.
  4. Transfer the mixture to the prepared baking sheet and spread into an even layer.
  5. Bake for 50 minutes, stirring once at about 30 minutes in to redistribute the oats.
  6. Remove from the oven and sprinkle the chopped chocolate over the top. Stir slightly (just a couple of swirls) to form some clusters.
  7. Allow to cool completely before storing in an airtight container at room temperature. Makes about 6 cups.
