Chocolate Protein Baked Oats (dairy-free)
Description
Chocolate Protein Baked Oats combine gluten-free rolled oats with vegan chocolate protein powder and egg whites for protein and structure. Sweetened with maple syrup and moistened with almond milk, the batter is baked at 350°F in silicone molds layered with mini chocolate chips for pockets of chocolate throughout. The result is a soft and slightly gooey baked oat that balances oat texture with chocolate richness and is dairy-free.
These baked oats suit a nutritious start to the day or a post-workout snack when a protein boost is desired. Toppings like melted chocolate or nut butter can be drizzled for added flavor and richness.
Tips include adjusting bake time based on protein powder type and noting that blending the batter unevenly is acceptable as it evens out during baking. Maple syrup is preferred over honey to maintain texture.
Ingredients
- ⅔ cup rolled oats gluten-free as needed
- ¼ cup vegan chocolate protein powder
- ¼ cup egg white
- 3 tbs maple syrup
- ½ cup almond milk
- ½ teaspoon baking powder
- 2 tbs mini chocolate chips plus more for drizzle
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Blend all ingredients except chocolate chips.
- Portion half the baked oats mixture into two silicone cups, and place 1 tbs chocolate chips in the middle of each. Top with remaining batter. Top with more chocolate if you want.
- Bake for 15 minutes.
- Drizzle with chocolate sauce and nut butter as desired.
Notes
- To drizzle chocolate sauce, melt 1 to 2 tablespoons of chocolate chips at low heat and pour over the oats.
- Baking time depends on protein powder type: pea-based proteins bake about 15 minutes, while some vegan proteins may need 2 more minutes and yield a thicker texture.
- Uneven blending of the batter is normal; just portion evenly to balance texture.
- Maple syrup is preferred over honey, which changes texture unless extra milk is added.
- The nutritional information excludes optional drizzles like nut butter and chocolate sauce.
