  • cup rolled oats gluten-free as needed
  • ¼ cup vegan chocolate protein powder
  • ¼ cup egg white
  • 3 tbs maple syrup
  • ½ cup almond milk
  • ½ teaspoon baking powder
  • 2 tbs mini chocolate chips plus more for drizzle

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. 
  2. Blend all ingredients except chocolate chips.
  3. Portion half the baked oats mixture into two silicone cups, and place 1 tbs chocolate chips in the middle of each. Top with remaining batter. Top with more chocolate if you want.
  4. Bake for 15 minutes.
  5. Drizzle with chocolate sauce and nut butter as desired.

Notes

  • To drizzle chocolate sauce, melt 1 to 2 tablespoons of chocolate chips at low heat and pour over the oats.
  • Baking time depends on protein powder type: pea-based proteins bake about 15 minutes, while some vegan proteins may need 2 more minutes and yield a thicker texture.
  • Uneven blending of the batter is normal; just portion evenly to balance texture.
