Ingredients

  • 1 cup steel cut oats I use Bob's Red Mill
  • 3 tablespoons Flaxseed ground
  • 2 tablespoons cocoa powder unsweetened
  • 1 teaspoon baking powder
  • ¾ teaspoon ground cinnamon
  • ¾ teaspoon salt
  • 2 ⅔ cup milk nonfat
  • cup pure maple syrup
  • 2 tablespoons coconut oil cooled, melted
  • 1 egg
  • 1 teaspoon vanilla extract pure
  • cup dried apricots chopped
  • cup dried cherries
  • cup almonds chopped, raw

Instructions

  1. Preheat the oven to 375 degrees F. Lightly coat an 8x8 baking pan with cooking spray.
  2. In a large bowl, stir together the steel cut oats, flaxseed, cocoa powder, baking powder, cinnamon and salt.
  3. In a medium bowl, whisk together the milk, maple syrup, coconut oil, egg and vanilla.
  4. Stir the milk mixture into the oat mixture. Stir to combine.
  5. Add the dried apricots, dried cherries and almonds, and stir again.
  6. Transfer the mixture to the prepared baking pan. Bake until the oatmeal is set and golden brown, 45 to 50 minutes.
  7. Let the mixture cool for 10 minutes. Cut into 9 squares. Serve with additional milk, if desired.
