Chongqing Noodles

Chongqing Noodles feature fresh or dried thin noodles combined with a flavorful sauce made from garlic, ginger, soy, and chili oil, offering a spicy, numbing experience from Sichuan peppercorn. The dish incorporates greens like water spinach or bok choy and a crushed peanut garnish for texture contrast. The warm, spicy, and slightly tangy broth-like sauce clings to the noodles, creating a balanced taste with layers of heat and umami.

Description

Chongqing Noodles focus on fresh or thin dried noodles served in a vibrant sauce combining soy sauce, chili oil, garlic, ginger, and optional Sichuan peppercorns to add a distinct numbing sensation. The recipe includes leafy greens such as Chinese water spinach or bok choy, providing a fresh, slightly crunchy contrast to the spicy noodles. A small amount of lard and sesame oil enrich the sauce, creating a glossy coating and fragrant aroma.

After cooking the noodles in boiling water, the hot cooking broth is added to the sauce to enhance the seasoning's depth and warmth. The dish is garnished with smashed peanuts, minced coriander, and optional pickled mustard stems (Zha Cai) for additional texture and a slight tang. Chili oil can be adjusted to increase the heat level according to preference.

Chongqing Noodles are best served immediately to maintain the freshness of the greens and preserve the bold flavors. The combination of spicy, savory, and tangy notes with crunchy peanuts and tender noodles makes it suitable as a light meal or accompaniment.
