Chopped Blue Cheese Salad

Ingredients

  • 6 cups iceberg lettuce approximately one head iceberg lettuce, chopped
  • ½ cup Bacon approximately 6 slices of cooked bacon, cooked, diced
  • 1 cup cherry tomato quartered
  • ½ cup blue cheese dressing
  • ¼ cup blue cheese crumbles
  • ¼ cup red onion diced
  • 2 tablespoons chives chopped
  • ½ teaspoon black pepper fresh cracked

Instructions

  1. Wash and chop the lettuce. Make sure it’s completely dry, then add it to a large bowl.
  2. Add the cherry tomatoes, red onions, half of the bacon, and half of the blue cheese crumbles to the bowl with the lettuce.
  3. Add the blue cheese dressing and toss until the lettuce is evenly coated in the dressing.
  4. Top the salad with the remaining bacon and blue cheese crumbles, as well as the chopped chives and black pepper. Serve immediately.

Notes

  • To make this salad in just 10 minutes, be sure to cook the bacon ahead of time. The bacon can be cooked up to 5 days ahead of time and stored in the fridge until you’re ready to assemble the salad.
  • This salad will serve 2-3 people as a main dish, or 4-6 people as a side dish or appetizer.
  • If you want to make this salad vegetarian, without bacon, I recommending subbing walnuts for the bacon. It will give you a similar salty, crunchy addition to the salad.
  • This recipe is naturally gluten free, using the ingredients shown and listed above.
