Chopped Green Goddess Salad

Chopped Green Goddess Salad combines chopped cabbage, Persian cucumbers, and green onions dressed with a creamy, bright green sauce made from spinach, basil, garlic, shallot, lemon juice, cashews, Parmesan, rice vinegar, olive oil, and salt. Tossed together, this salad offers a fresh, crisp texture with herbal, tangy, and nutty flavors. Served with tortilla chips, it provides a crisp, flavorful side or light meal.

Description

This salad features finely chopped green cabbage, Persian cucumbers, and green onions, which provide a crunchy, refreshing vegetable base. The dressing is a blended mixture of fresh baby spinach, basil, garlic, shallot, lemon juice, cashews, Parmesan cheese, rice vinegar, olive oil, and salt, producing a smooth, creamy, and vibrantly green dressing with herbal and bright notes.

After blending the dressing until creamy, it is poured over the vegetables and tossed to combine, coating the vegetables evenly. The addition of crunchy tortilla chips when serving adds a contrasting texture and a mild saltiness.

Ideal as a light side dish or appetizer, this salad's fresh and herbaceous flavors complement a variety of meals and provide a flavorful vegetable option.

For storage, keep the salad and dressing in separate airtight containers in the fridge and consume within 1-2 days to maintain freshness and texture.
