  • 1 tablespoon butter
  • ½ cup chorizo or more to taste, Mexican-style
  • 1 teaspoon garlic minced
  • 6 egg
  • salt to taste
  • black pepper to taste
  • Monterey jack cheese shredded (optional

Instructions

  1. Add 1 tablespoon butter to a large nonstick skillet and melt on medium heat.
  2. Add chorizo and cook for about 5 minutes, or until browned. Mix in minced garlic.
  3. While chorizo is cooking, add eggs to a medium bowl and whisk together. Add salt and pepper and pour into skillet.
  4. Cook chorizo and eggs and stir for about 4-5 minutes or until eggs are cooked.
  5. Turn off skillet and top with shredded cheese, if desired. Remove from frying pan once cheese is melted. Serve warm topped with fresh cilantro or Homemade Salsa (optional).
