Chorizo chickpea stew (fast)
Description
This quick stew starts by sautéing slices of chorizo in olive oil until browned, releasing its smoky oils. Garlic, thyme, smoked paprika, and bay leaf are then cooked briefly to build aromatics. Canned crushed tomatoes, drained chickpeas, chicken stock, and seasonings are added and simmered gently for 15 minutes uncovered, allowing the sauce to thicken and flavors to meld. The bay leaf is discarded at serving.
The smoky paprika complements the chorizo’s robust flavor, while the chickpeas add a soft, creamy texture to the stew. The sauce is slightly thickened with the cooked tomatoes and reduced broth, making it satisfying spooned with crusty bread.
This dish is hearty enough for a main course and benefits from fresh bread to soak up its rich sauce. Leftovers keep well refrigerated or can be frozen for longer storage.
Ingredients
- 1 1/2 tbsp olive oil
- 250g / 8 oz chorizo cut into 8mm / 1/3" slices (Note 1, 2 pieces
- 2 garlic minced, cloves
- 1/2 tsp thyme dried
- 1/2 tsp smoked paprika (sub normal paprika)
- 1 bay leaf , preferably fresh, otherwise dried
- 400g / 14oz crushed tomato canned
- 400g/14 oz chickpeas drained (or other beans of choice, canned
- 1 cup chicken stock low sodium, or broth
- 1/4 tsp kosher salt cooking salt
- 1/4 tsp black pepper
Instructions
- Sauté chorizo - Heat olive oil in a large saucepan or small pot over medium high heat. Add chorizo and cook for 3 minutes or until golden.
- Sauté aromatics - Add garlic, thyme, paprika and bay leaf, then stir for 1 minute.
- Add everything else - Add tomato, chickpeas, chicken stock, salt and pepper. Stir, bring to a simmer then lower the heat down to medium low so it is simmering very gently.
- Cook for 15 minutes (no lid), stirring regularly to ensure the base does not catch, until the sauce has reduced and thickened.
- Serve - Discard bay leaf and serve. I love this with hot crusty bread (slathered with butter!).
Notes
- Spanish chorizo adds distinct flavor; other smoked sausages can be substituted with a similar smoky profile.
- Two 125g chorizos used; slight variation in amount won't affect the dish significantly.
- Leftovers store up to 4 days in the fridge or 3 months frozen.
