Chorizo Tacos Recipe

This is my favorite chorizo tacos recipe with spicy Mexican chorizo served over warmed corn tortillas with red onion, fresh cilantro, sliced peppers and creamy chipotle sauce.

Ingredients

Servings
  • 1 teaspoon olive oil
  • 1 onion chopped, small, white
  • 1 jalapeno pepper chopped
  • 12 ounces Mexican chorizo or use your favorite store bought brand, homemade
  • 8 corn tortillas warmed
  • jalapeño For serving/toppings, sliced, chopped, fresh, or alternatives included
  • red onion
  • cilantro
  • hot sauce
  • chipotle sauce
  • chipotle aioli

Instructions

  1. Heat the oil in a large pan and add the white onion and jalapeno pepper. Cook for 3 minutes, until they start to soften.
  2. Add the chorizo and break it apart with a wooden spoon. Cook for 10 minutes, until it cooks through. If you prefer crispy chorizo, continue to cook another 4-5 minutes, until the edges crisp up. Remove from heat.
  3. Serve the spicy chorizo mixture over warmed tortillas and top with your favorite toppings.
