  • 1 pound ground beef
  • 1 onion chopped
  • 2 talks celery chopped
  • 3 garlic minced, cloves
  • 1/2 cup cashews divided
  • 2 cups rice cooked
  • 1 can cream of mushroom soup condensed
  • 1/2 cup water
  • 3 tablespoons soy sauce
  • 5 ounces Chow Mein noodles

Instructions

  1. Preheat oven to 350 F
  2. In a large skillet or saucepan, brown the ground beef until cooked through, about 10 minutes. Add the onion and celery and saute for another 5 minutes. Add the garlic and cook for another minute.
  3. Stir in the rice, soup, water, soy sauce and half of the cashews (1/4 cup) and mix until well combined.
  4. Place this into a lightly greased 9x13 inch baking dish or deep round casserole dish. Top with chow mein noodles and remaining nuts.
  5. Bake at 350 F for 20 minutes.
