Christina's “Better than Trader Joe's” Buttermilk Pancakes
Description
This recipe for Christina's “Better than Trader Joe's” Buttermilk Pancakes uses a straightforward combination of dry ingredients mixed with egg, buttermilk, water, olive oil, and melted butter. The use of buttermilk reacts with baking powder to create a tender, slightly airy pancake. The batter is mixed just enough to combine ingredients, leaving small lumps intact to prevent toughness.
Cooking on a medium to medium-high griddle allows the pancakes to develop a golden brown exterior while the inside remains soft. When bubbles form and pop on the surface, flipping ensures even cooking. The result is a stack of lightly sweet, tender pancakes.
Serve these pancakes immediately with syrup, honey, or fruit toppings. They make a classic breakfast option that can be easily customized by adding blueberries or chocolate chips as suggested.
The note suggests adding fruit like blueberries or chocolate chips to the batter to vary the recipe. Keep batter lumps to preserve texture and avoid overmixing.
Ingredients
- 1 cup flour
- 2 Tbsp sugar
- ⅛ tsp salt
- 1 ½ tsp baking powder
- 1 egg slightly beaten
- 8 oz buttermilk
- 2 Tbsp water
- 2 Tbsp olive oil light
- 1 Tbsp butter melted
Instructions
- Heat a griddle or non-stick pan over medium to medium high heat.
- Mix the dry ingredients together in a medium size bowl and make a well in the center.
- Mix the rest of the ingredients together in a measuring jar, then pour into the dry ingredients.
- Whisk all the ingredients together, but do not overmix, or the pancakes will be tough (it’s okay to see a few lumps.) Using a 1/4 cup measuring cup, pour batter onto hot griddle or pan, to make 2 or 3 pancakes. When bubbles start to form and pop, flip the pancakes with a turner, and continue to cook until the pancakes rise nicely and are golden brown on both sides, adjusting the heat accordingly, if necessary.
- Serve immediately with real maple syrup, fruit syrup, honey and/or fruit.
Notes
- Adding blueberries or chocolate chips to the batter offers a flavorful variation.
