Christmas Pancakes

These Christmas Pancakes incorporate festive sprinkles into a classic batter made from all-purpose flour, sugar, baking powder, milk, oil, egg, and vanilla. The pancakes cook to golden brown on each side and are finished with whipped cream and strawberries for a seasonal look. The sprinkles provide colorful accents inside and on top.

Description

The pancake batter combines flour, sugar, baking powder, and salt blended with milk, vegetable oil, beaten egg, vanilla extract, and Christmas-themed sprinkles. The batter is cooked on a hot, greased griddle into 4-inch rounds. Pancakes are flipped when bubbles appear and browned on both sides. They can be kept warm in an oven or covered to retain heat.

For serving, pancakes are topped with dollops of whipped cream and halved strawberries arranged on the cream to decorate. Additional sprinkles apply as garnish. This adds a festive touch suitable for holiday breakfasts or celebrations.

Leftover pancakes should be stored in a zip-top bag and refrigerated up to three days or frozen up to three months. This allows for quick reheating for convenient breakfast use. The recipe references a guide on freezing pancakes for best results.

Ingredients

Servings
  • cups all-purpose flour
  • ¼ cup sugar
  • 4 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 cups milk
  • cup vegetable oil
  • 1 egg beaten
  • 1 teaspoon vanilla extract
  • ¼ cup Sprinkles plus more for topping, Christmas style
  • Whipped Cream
  • 12 strawberry tops cut off

Instructions

  1. In a medium mixing bowl, mix flour, sugar, baking powder, and salt until combined. Add the milk, vegetable oil, egg, and vanilla. Whisk until smooth. Stir in the sprinkles.
  2. On a hot, greased griddle, ladle the batter into 4-inch pancakes. Once the cakes begin to bubble, it's time to flip. Pancakes are done once each side is golden brown.
  3. Keep pancakes warm by covering them with a kitchen towel, placing them in a chafing dish, or in the oven at around 200°F for up to 20 minutes.
  4. Add a dollop of whipped cream to the center of the pancakes, add a strabwerry cut side down, and top with a dot of whipped cream.

Notes

  • Store pancakes in a sealed plastic bag in the refrigerator for up to 3 days.
  • For longer storage, freeze pancakes in a freezer bag for up to 3 months.
  • Use gentle reheating methods such as a toaster, microwave, or oven to maintain texture.
