Christmas Salad

Christmas salad with pasta is a colorful and festive dish that adds a refreshing twist to your Christmas menu.

Ingredients

Servings
  • 4 cups rotini pasta cooked
  • ¼ cup sundried tomato chopped, keep 3 tablespoons of the oil
  • 8 oz mozzarella baby
  • 4 oz salami quartered
  • 8 Artichoke quartered, baby
  • 3 tablespoons green olive sliced
  • mache lettuce could also use leaf lettuce or boston bibb, or baby spinach, large handful

Dressing

  • 2 tablespoons bell pepper pesto roasted
  • ¼ cup sun dried tomato oil
  • 1 tablespoon garlic minced

Instructions

  1. Cook the pasta according to the package directions. Toss with a small amount of oil and cool.
  2. In a large salad bowl, combine the cooked pasta, sundried tomato, mozzarella, salami, baby artichoke and green olive.
  3. In a small bowl, combine the pesto, sundried tomato oil and garlic and mix well.
  4. Pour the dressing into the salad bowl and toss all together.
  5. Add the mache on top and serve.

Notes

  • To prevent the pasta from getting mushy once it’s mixed in the salad, cook it just until al dente. Then, rinse it under cold water to cool it quickly. This step will also stop the cooking process and cool the pasta down quickly.
  • If needed, you can substitute the rotini with another pasta that will hold up well with the other ingredients and the dressing. Examples are penne, fusilli, or farfalle.
  • Toss the cooked pasta with a small amount of dressing while it's still warm. This helps the pasta absorb the flavors better.
  • If you are swapping out ingredients, aim for a balanced mix of pasta, vegetables, proteins, and dressing. Ensure the salad has various colors, textures, and flavors for a more satisfying salad. 
  • To add visual appeal and extra flavor, garnish the pasta salad with fresh herbs, grated cheese, or additional toppings just before serving.
