Christmas Veggie Tray [Tree OR Wreath]
Description
The recipe starts by boiling water and layering cauliflower, broccoli, broccolini, and asparagus to steam briefly until tender but still firm. After steaming, the vegetables are cooled under cold water to stop cooking and maintain their freshness and color. Cherry tomatoes remain raw for their juicy pop.
Once cooled and drained, the vegetables are arranged around a bowl of classic hummus placed centrally on a tray. Broccoli florets form a base layer with florets facing upward, followed by other vegetables arranged to form holiday shapes like trees or wreaths. This assembly creates a vibrant and edible decoration that combines fresh textures with a creamy dip.
Choosing fresh vegetables enhances flavor and crunch. The method allows flexibility to serve vegetables raw or steamed, depending on personal preference, while careful cooking avoids limpness. Experimenting with different vegetable varieties and designs can personalize the tray for various holiday settings.
Ingredients
- 2 cups of water
- ¼ head cauliflower cut into 2” florets, of
- 5 heads broccoli cut into 2” florets
- 2 bunches broccolini ends trimmed
- 1 bunch asparagus ends trimmed
- 1 pint cherry tomato
- Classic Hummus
Instructions
- In a large pot with a lid, pour in the water and bring to a boil. (You can avoid the steaming process and jump to step 5 if you prefer your veggies to be raw.)
- Once your water is boiling, carefully add in layers of the cauliflower, broccoli, broccolini, and asparagus. Cover with a lid and reduce the heat to low heat. Do not lift the lid for 5 minutes.
- Lift the lid and carefully remove your veggies with tongs and place them in a colander. Make sure to keep your vegetables organized so it’s easier for you to put the wreath together. Rinse with cold water to cool the veggies and stop them from cooking further.
- Once your veggies are cool, start assembling the tray. First place the classic hummus in the middle of the tray. Then spread the broccoli evenly all around your hummus bowl. Make sure the broccoli florets are all facing up. After you have a solid base of broccoli, start adding the remaining veggies to make your own holiday wreath.
Notes
- Select fresh vegetables for better flavor, texture, and appearance.
- Decide whether to serve vegetables raw or lightly steamed based on preference.
- Avoid overcooking vegetables to maintain firmness and vibrant color.
- Place longer-cooking vegetables closer to the heat source for even steaming.
- Take creative liberty in arranging vegetables to form festive shapes and designs.
