Description
The granola is made by whisking maple syrup, coconut or brown sugar, vanilla extract, salt, and vegetable oil, then folding in oats, chopped almonds, and walnuts. The mixture is spread evenly on a parchment-lined baking sheet and compacted to create dense clusters. Baking at 325°F ensures a toasted texture without burning. Once cooled, chopped raisins, cranberries, Goji berries, dates, and unsweetened coconut flakes are tossed in to add bursts of sweetness and chewiness throughout.
This method produces chunky, hearty granola pieces rather than loose flakes, making it suitable for eating with milk, sprinkling over yogurt, or snacking by the handful. The nuts and dried fruit contribute richness and natural sweetness.
Proper cooling and gentle breaking help maintain the clusters. Stored airtight, this granola remains crisp for about a week on the counter.
Ingredients
- 1/3 cup maple syrup
- 1/3 cup coconut sugar packed, or brown sugar
- 4 teaspoon vanilla extract
- 1/2 teaspoon table salt
- 1/2 cup vegetable oil grapeseed, coconut, and avocado oil would all work
- 5 cups rolled oats old-fashioned
- 1 cup walnuts chopped
- 1 cup almond chopped, raw
- 1/2 cup raisins chopped
- 1/2 cup cranberries chopped
- 1/2 cup Goji berries chopped
- 1/2 cup dates chopped
- 1/2 cup coconut flakes unsweetened
Instructions
- Adjust the oven rack to upper middle position. Heat oven to 325 °F.
- Line your sheet pan with parchment paper. (it helps tremendously when it is time to clean.)
- Whisk maple syrup, brown sugar, vanilla, salt and oil in a BIG bowl.
- Add the oats, almonds and walnuts in to the liquid mixture and fold until thoroughly mixed.
- Transfer the oat mixture onto baking sheet and spread it to make an even layer.
- Using the back of a ramekin* or a spatula, compress oat mixture until it is very compact.
- Bake for 20-25 minutes rotating pan once halfway through baking.
- Once baked, remove it from the oven and let it cool for 15-30 minutes.
- Break cooled granola into pieces of your desired size.
- Mix in the chopped dried fruit and shredded coconut.
Notes
- Press the granola mixture firmly with a flat-bottomed ramekin before baking to create solid clusters.
- Allow the granola to cool completely at room temperature before breaking to maintain chunkiness.
- Break cooled granola gently with a large spatula to preserve clusters and avoid powdery pieces.
- Add chopped dried fruits and coconut flakes only after cooling to keep them from burning.
- Store granola in an airtight container at room temperature for up to one week to preserve crunchiness.
