Ingredients
- 2 banana ~1 cup mashed, medium, overripe, 240g
- 2 egg large
- 1/4 cup maple syrup pure, 60g
- 2 tsp vanilla extract
- 1 cup almond milk or any milk, 240g
- 1.5 cups old fashioned oats 120g
- 1/4 cup vanilla protein powder can omit, 30g
- 1 tsp baking powder
- 1/2 tsp cinnamon each
- 1/2 tsp salt each
- 1/2 cup chocolate chips divided, 80g
- 1/2 cup walnuts chopped, 56g
- 1-2 tsp brown sugar for sprinkling over top
Instructions
- Preheat the oven to 350 degrees F. Spray an 8×8-inch baking dish with cooking spray and/or line with parchment paper.
- In a medium sized bowl, mash the banana with a fork then whisk in the egg, maple syrup and vanilla. Whisk in the milk.
- Add the oats, protein powder, baking powder, cinnamon and salt and mix to combine. Then fold in half of the chocolate chips.
- Pour batter into the prepared dish and sprinkle the chopped walnuts, brown sugar and remaining chocolate chips over top.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Notes
- Store leftovers covered in the refrigerator for up to one week; enjoy cold or warmed in the microwave for 30-60 seconds.
- Freeze individual bars wrapped in plastic or foil inside a sealed bag for up to three months.
- Top servings with fresh banana slices, peanut butter, toasted coconut flakes, fresh berries, more chocolate, or Greek yogurt for variety.
