  • 2 banana ~1 cup mashed, medium, overripe, 240g
  • 2 egg large
  • 1/4 cup maple syrup pure, 60g
  • 2 tsp vanilla extract
  • 1 cup almond milk or any milk, 240g
  • 1.5 cups old fashioned oats 120g
  • 1/4 cup vanilla protein powder can omit, 30g
  • 1 tsp baking powder
  • 1/2 tsp cinnamon each
  • 1/2 tsp salt each
  • 1/2 cup chocolate chips divided, 80g
  • 1/2 cup walnuts chopped, 56g
  • 1-2 tsp brown sugar for sprinkling over top

Instructions

  1. Preheat the oven to 350 degrees F. Spray an 8×8-inch baking dish with cooking spray and/or line with parchment paper.
  2. In a medium sized bowl, mash the banana with a fork then whisk in the egg, maple syrup and vanilla. Whisk in the milk.
  3. Add the oats, protein powder, baking powder, cinnamon and salt and mix to combine. Then fold in half of the chocolate chips.
  4. Pour batter into the prepared dish and sprinkle the chopped walnuts, brown sugar and remaining chocolate chips over top.
  5. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Notes

  • Store leftovers covered in the refrigerator for up to one week; enjoy cold or warmed in the microwave for 30-60 seconds.
  • Freeze individual bars wrapped in plastic or foil inside a sealed bag for up to three months.
