This Churrasco recipe uses skirt steak marinated in a vibrant blend of chopped cilantro, lime juice, onion, garlic, pickled jalapeño rings, vegetable oil, salt, and pepper. The mixture is blended smooth to coat the meat thoroughly and allow flavors to penetrate.

After marinating at room temperature for 30 minutes, the steak is grilled over medium-high heat to develop a charred crust while retaining a tender, juicy center. Cooking times vary from 3-6 minutes per side depending on desired doneness. Resting the steak before slicing against the grain ensures a tender bite.

Ingredients

  • 1.5 lb skirt steak
  • 1 cilantro 1 cup, packed - leaves and stems, bunch
  • 1/3 cup lime juice (See Note 1)
  • 1 onion trimmed
  • 2 garlic chopped, cloves
  • 2 tbsp vegetable oil
  • 1/2 cup jalapeño sliced, pickled, rings
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a food processor add the cilantro, quartered onion, juiced limes, garlic, oil, jalapeños, salt and pepper. Blend until smooth.
  2. Preheat grill to 350-400°F.
  3. Pour this mixture into a Ziploc bag or container that can seal and add the skirt steak pieces. Seal and let marinate at room temperature for 30 minutes.
  4. Clean grill and oil. Grill 3-4 minutes per side for medium rare. 5-6 minutes per side for medium. Allow to rest 5 minutes before slicing AGAINST the grain.

Notes

  • Use Mexican limes if available for extra juiciness and higher acidity.
  • Regular limes can substitute if Mexican varieties are not on hand.
