  • 1 cannellini beans approx. 15 oz, can
  • ½ avocado large ripe
  • ½ jalapeño (seeds/veins removed)
  • 2 cloves garlic
  • ½ cup spinach just grab a handful!, fresh
  • 2-3 TBSP lime juice fresh
  • 2 TBSP cilantro plus extra to taste, fresh
  • 2 TBSP olive oil plus extra to garnish
  • ¼ tsp salt

Instructions

  1. Have 5 minutes handy? Good! You can make this dip!
  2. Drain and rinse your beans and combine in a food processor [or blender!] with all of the above ingredients.
  3. Whip until creamy, scraping down the sides as needed.
  4. Serve a room temperature with your favorite dippers and a drizzle of olive oil!

Notes

  • Try serving with sliced cucumber, tortilla chips, pita chips, or assorted fresh vegetables for variety.
  • The recipe yields approximately 2 cups of dip, with about 2 heaping tablespoons per serving.
