Description

This sauce combines fresh cilantro leaves and stems, peeled garlic cloves, and red onion or a milder shallot into a blender or food processor. The mixture is pulsed to finely mince the ingredients before adding olive oil and red wine vinegar for balance and consistency. Dried oregano and red pepper flakes add herbal and spicy notes to the bright, fresh flavor.

After blending, the sauce rests at room temperature for about 20 minutes to allow the flavors to develop fully. The texture is slightly chunky, not pureed smooth, retaining visible bits of herbs and aromatics. Ingredients

Servings
  • 2 cups cilantro about 1 large or 2 small bunches, fresh, stems and leaves
  • 3 cloves garlic peeled
  • 1/4 red onion you can use a shallot for a less strong onion flavor, small, peeled and cut into chunks
  • 2 tsp red pepper flakes
  • 2 tsp oregano dried
  • 2 tbsp red wine vinegar
  • 1 cup olive oil
  • salt to taste
  • black pepper to taste

Instructions

  1. In a blender, or food processor, add the cilantro, garlic, onion, pepper, oregano, vinegar, and 1/2 of the olive oil
  2. Pulse uto mince the ingredients
  3. Add the remaining olive oil and gently stir to combine
  4. Tranfer the sauce to a mason jar and let it sit 20 minutes at at room temp before serving

  • Make the chimichurri sauce ahead of time and refrigerate overnight to enhance flavor integration.
  • Remove from the refrigerator about 15 minutes before serving to allow the sauce to reach room temperature.
