  • 1/2 cup yogurt see note 1, plain, Greek
  • 2 tablespoons lime juice (from 2 limes)
  • 2 cloves garlic minced (see note 2)
  • 1/4 cup olive oil
  • salt freshly ground
  • black pepper freshly ground

Instructions

  1. In a food processor or blender, combine cilantro, yogurt, lime juice, and garlic. Blend until smooth.
  2. With the motor running, slowly add olive oil through the feed-tube. Season to taste with salt and pepper (I like 1/4 teaspoon salt and a pinch of pepper). Chill until serving.

Notes

  • Use plain Greek yogurt with 2% fat or higher for richer flavor; sour cream can be substituted.
  • Finely mince garlic before blending to avoid large chunks of garlic in the dressing.
  • This recipe makes about 2 cups, enough for about 16 servings at 2 tablespoons each.
  • Store leftovers covered in the refrigerator for up to 4 days to retain freshness.
