Cilantro Lime Rice

Cilantro Lime Rice blends lightly toasted white rice simmered in chicken stock with a bright, fresh cilantro and lime puree. The rice absorbs flavorful broth, then is combined with a puree of cilantro, lime juice, garlic, and oil or water, resulting in a fragrant, colorful side dish. The combination adds zest and herbal freshness, making it a good accompaniment for a variety of Mexican-inspired meals.

Description

This dish begins by toasting white rice briefly in oil to develop a subtle nutty flavor and prevent sticking. Chicken or vegetable stock is added along with salt, and the rice is simmered until liquid is absorbed. After cooking, the rice rests off heat covered to finish steaming. Meanwhile, cilantro leaves (stems removed) are roughly chopped and blended with lime juice, garlic, and a bit of water or oil to form a bright green sauce. This mixture is stirred into the cooked rice, imparting herbaceous aromatics and acidity.

The resultant rice is fluffy with a faintly tangy and herbal flavor profile, highlighted by lime's brightness and garlic's gentle pungency. It complements richly flavored mains or dishes where a fresh acidic balance is desired. Adjustments to cilantro quantity or additional salt can tailor seasoning.
