Cilantro Lime Rice

Cilantro Lime Rice blends fluffy long-grain white rice with fresh lime zest and juice, plus chopped cilantro for a bright, herbaceous flavor. The rice is boiled with salt and rested to create separate, tender grains, making it a refreshing side that pairs well with Mexican, grilled, or light dishes.

Description

Cilantro Lime Rice starts with rinsed long-grain white rice cooked in salted boiling water until tender. After cooking, the rice is left covered off the heat to steam, allowing moisture to absorb fully and keeping the grains separate and fluffy. Fresh lime zest and juice are then folded in, adding a tangy brightness. Chopped cilantro brings a fresh herbal note that complements the citrus well.

The flavor is light and vibrant, with the citrus lifting the mild rice base and cilantro adding green, aromatic complexity. This side dish works well alongside spicy entrees, grilled meats, or as part of rice bowls. Adjusting salt to taste helps balance flavors for different meals.

Leftover rice keeps well refrigerated up to four days and can be frozen up to six months. Reheating is best done gradually in the microwave or stovetop with a little water to restore moisture, ensuring the rice remains soft and separated.

  • ¼ teaspoon salt plus more to taste
  • 1 ½ cups water
  • 1 lime zest and juice
  • ¼ cup cilantro chopped

  2. Remove the pot from the heat. Allow the rice to rest covered for 5 minutes in order to absorb all the liquid and steam.
