Cilantro Lime Rice
Description
This recipe starts with rinsed long grain rice cooked in water with salt and unsalted butter to add richness. After simmering covered for 20 minutes, the rice is fluffed carefully with two forks to avoid crushing the grains. Fresh lime juice and zest are stirred in along with chopped cilantro for a fresh, tangy flavor. The butter enhances the rice's texture and adds a mild richness balancing the citrus and herb flavors.
The combination results in a fluffy, aromatic rice with bright lime notes and a fresh herbal finish from cilantro. The cilantro lime rice pairs well with Mexican, Tex-Mex, or other dishes that benefit from a citrus-herb side. It can be served warm or at room temperature.
The recipe suggests using basmati rice for the best texture and flavor, though jasmine rice also works. If preferred, the rice can be browned gently in butter before cooking for a nuttier flavor. Substituting fresh parsley is an alternative for those who dislike cilantro. Leftovers should be cooled promptly and stored in the refrigerator for up to 3-4 days or frozen for up to three months, reheated gently after thawing.
Ingredients
- 1½ cups long grain rice like Jasmine or Basmati, rinsed well and drained
- 3 cups water
- ½ teaspoon salt
- 2 tablespoon butter unsalted
- 2 tablespoon lime juice freshly squeezed
- 1 tablespoon lime zest
- ½ cup cilantro chopped
Instructions
- Cook Rice: Add the rice, water, salt and butter to a large saucepan. Bring to a boil, cover the saucepan and reduce heat to low. Simmer for 20 minutes.
- Finish & Serve: Remove from heat, and fluff the rice with 2 forks. Stir in the lime juice, lime zest and cilantro. Taste for seasoning and adjust with salt as needed.
Notes
- Basmati rice is preferred for this dish due to its texture and aroma, though jasmine is acceptable.
- Fluff the rice gently with two forks to separate grains before mixing in lime and cilantro.
- For a nuttier flavor, toast the rice lightly in butter before cooking.
- Substitute fresh parsley if cilantro is not to your taste.
- Store leftover rice promptly in an airtight container in the fridge for up to 3-4 days.
- Freeze rice in airtight bags, thaw overnight in the fridge, and reheat gently; frozen rice keeps up to 3 months.
