Cilantro Lime Rice
Description
The rice is first coated in butter and lightly toasted before adding chicken broth, salt, pepper, cumin, lime juice, and zest. Cooking it covered and then allowing it to rest off heat gives the grains a tender texture without becoming sticky. The cilantro stirred in at the end adds a fresh, grassy note.

Ingredients
- 1 tablespoons butter
- 1 ¼ cups rice long grain white rice or jasmine rice works best
- 2 ¼ cups chicken broth low-sodium
- ¾ teaspoon salt
- ¼ teaspoon black pepper freshly ground
- lime juice and zest
- 2 tablespoons cilantro chopped
- ¼ teaspoon cumin ground
Instructions
- In a skillet or medium saucepan, melt the butter and add the rice. Stir, letting the rice and butter cook for 1-2 minutes.
- Add remaining ingredients and bring to a boil. Reduce heat, cover and cook for 15-16 minutes.
- Remove from heat and let stand, covered, for 10 minutes. Fluff with fork and serve.
Notes
- This recipe works best with long grain or jasmine rice for optimal texture and flavor.
- Brown rice can be used as a substitute, though cooking times and liquid amounts may differ; some have successfully adjusted the recipe accordingly.
