Cilantro-Lime Shrimp And Rice

Ingredients

Servings

For The Rice:

  • 1 cup basmati rice
  • 1 1/2 cups water
  • 1/4 teaspoon salt
  • 1/4 cup cilantro chopped
  • lime juice of 1

For The Shrimp:

  • 2 tablespoons butter
  • 2 cloves garlic sliced
  • 14 ounces Shrimp uncooked and deveined
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin ground
  • salt to taste
  • black pepper to taste, freshly ground
  • 1/2 lime cut into wedges, for serving

Instructions

  1. Add the rice, water, and salt to a pot. Cover and bring to a boil. Reduce the heat and simmer for 15 minutes, or until the water has evaporated. Remove from the heat and let sit covered for 5 minutes.
  2. In a nonstick skillet over medium heat, melt the butter. Add the garlic, shrimp, paprika, cumin, and a pinch of salt and pepper. Sauté for 5 minutes, or until the shrimp flesh turns pink and white. Set aside.
  3. Uncover and fluff the rice with a fork. Add the cilantro and lime juice, and toss it all together. Serve the shrimp with the cilantro-lime rice, and serve with an extra wedge of lime.
