Cilantro Lime Shrimp Lettuce Wraps

Ingredients

Servings

Seasoning

  • 1 tablespoon smoked paprika
  • ½ teaspoon oregano dried
  • ½ teaspoon cumin
  • ¼ teaspoon garlic powder
  • salt to taste
  • black pepper to taste, ground

Lettuce Wraps

  • 2 tablespoons olive oil
  • 1 pound Shrimp medium, shelled and deveined
  • 3 tablespoons lime juice
  • 3 tablespoons cilantro chopped, fresh
  • ½ cut onion thinly sliced
  • 2 cups bell pepper thinly sliced
  • 1 head butter lettuce trimmed, washed, dried
  • avocado for serving, sliced
  • lime for serving, wedges

Instructions

  1. Make the seasoning by combining 1 tablespoon smoked paprika, ½ teaspoon dried oregano, ½ teaspoon cumin, ¼ teaspoon garlic powder, and salt and ground black pepper to taste in a small bowl.
  2. Add 1 pound shelled and deveined medium shrimp and 1 tablespoon of the 2 tablespoons olive oil to a large bowl. Top with half of the seasoning, 3 tablespoons lime juice, and 3 tablespoons chopped fresh cilantro and toss until the shrimp are fully coated.
  3. Add the remaining olive oil to a medium skillet and heat over medium-high heat. Add the seasoned shrimp and cook for 2-4 minutes, until they are beginning to brown and are opaque in color. Remove the shrimp from the pan and reserve on a plate.
  4. Add ½ cut thinly sliced onion, 2 cups thinly sliced bell pepper, and the remaining half of the seasoning to the skillet and cook for 2-3 minutes, or until desired tenderness. Add the shrimp back to the skillet and cook for about 30 seconds to combine everything, then turn off the heat.
  5. Assemble lettuce wraps by placing a spoonful of cooked filling into the center of the leaves from 1 head trimmed, washed, and dried butter lettuce. Serve immediately with sliced avocado and lime wedges or your desired toppings.
