Ingredients

Vegetables and Coconut Rice:

  • 1.5 cups brown rice short grain
  • 1 cup coconut milk light
  • 1 large red bell pepper sliced
  • 3 large carrot peeled and sliced
  • 2 cups snap peas chopped
  • 1/4 cup onion red, chopped
  • 3 tsp avocado oil
  • 1 tbsp garlic chopped

Cilantro Lime Dressing:

  • 4 tbsp lime juice freshly squeezed, approx. 2 limes
  • 4 tbsp olive oil
  • 1.5 tsp coconut sugar or granulated sugar
  • 1 tsp kosher salt
  • 2 tbsp cilantro fresh, chopped
