Cilantro Sauce
Description
The sauce is made by combining about one bunch of roughly chopped fresh cilantro with extra virgin olive oil, lime juice, a clove of garlic, a small amount of honey for subtle sweetness, and salt. The ingredients are blended or pulsed until smooth, creating a bright green sauce with fresh herbal and citrus notes balanced by mild garlic and sweetness. The lime juice provides acidity that brightens the flavor, while the olive oil adds richness and body.
This sauce can be kept refrigerated but is freshest within the first two days after making, though it will remain usable for up to five days if stored properly in an airtight non-reactive container. It yields approximately half a cup, suitable for drizzling over grilled meats, vegetables, or as a flavorful dip. The simple preparation makes it easy to integrate fresh flavors into many meals, and variations can be made by adjusting garlic or honey amounts to taste.
