Description

The sauce is made by combining about one bunch of roughly chopped fresh cilantro with extra virgin olive oil, lime juice, a clove of garlic, a small amount of honey for subtle sweetness, and salt. The ingredients are blended or pulsed until smooth, creating a bright green sauce with fresh herbal and citrus notes balanced by mild garlic and sweetness. The lime juice provides acidity that brightens the flavor, while the olive oil adds richness and body.

This sauce can be kept refrigerated but is freshest within the first two days after making, though it will remain usable for up to five days if stored properly in an airtight non-reactive container.   • 1 cup cilantro about one bunch, roughly chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lime juice
  • 1 clove garlic
  • 1 teaspoon honey (vegan: use agave syrup)
  • 1/4 teaspoon salt

Instructions

  1. Place all of the ingredients in a small food processor or a blender and pulse/blend until the mixture is smooth.Transfer the cilantro sauce to an airtight non-reactive container and store in the fridge until ready to use.  Best eaten the same day or within 2 days but will keep for up to 5 days.Makes approximately 1/2 cup cilantro sauce.
