Cilantro Vinaigrette
Description
This Cilantro Vinaigrette is made by combining chopped shallot, fresh cilantro leaves, garlic, red pepper flakes, olive oil, red wine vinegar, and salt in a high-powered blender. Blending for about a minute produces a smooth, consistent dressing that captures the fresh, slightly spicy, and tangy qualities of its ingredients.
The vinaigrette offers a vibrant green color and fresh herb flavor with subtle heat from the red pepper flakes. Its texture is smooth yet slightly thickened by the blended shallot and cilantro. This versatile dressing works well drizzled on leafy greens or used as a marinade.
Storing the vinaigrette in the refrigerator keeps it fresh for up to five days. Before serving, it can be shaken or stirred to recombine the ingredients if separation occurs.
