  • 1 cup milk of choice
  • 6 oz Greek yogurt plain, container
  • 4-5 tablespoons maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 apple shredded
  • 1 cup berries fresh or frozen, of choice
  • 1/4 cup almonds sliced

Instructions

  1. Preheat oven to 350° F. and spray an 8x8 or similar size baking dish with cooking spray.
  2. In a large bowl whisk together the wet ingredients. Add in the oats, baking powder, cinnamon, nutmeg and salt. Stir together and then stir in the shredded apple, berries, and almonds.
  3. Pour the mixture into the prepared baking dish and bake for 35-40 minutes or until lightly browned and set. Remove from the oven and let it cool for 10 minutes before serving.
