Description

The breadsticks begin with a yeast dough made from warm water, active dry yeast, sugar, flour, and salt. The dough is cut into strips which can be twisted for texture and placed on a greased sheet for a short second rise. Baking follows until the breadsticks turn golden brown.

Breadsticks

  • 1 ½ cups water about 105 F, warm
  • 1 tablespoon active dry yeast
  • 2 tablespoons granulated sugar
  • 3-4 cups all-purpose flour
  • 1/2 teaspoon salt

Topping

  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup butter melted

Instructions

  1. In the bowl of a stand mixer (or in a large bowl), stir together the warm water, yeast, and sugar. Let stand for 5-10 minutes or until foamy.
  2. Mix in 2 cups flour and salt. Continue adding flour 1/4 cup at a time until dough clears the sides of the bowl.
  3. Knead dough for three minutes.
  4. Cover, and let the dough rest for 10 minutes.
  5. Grease an 11X17-inch baking sheet with nonstick cooking spray.
  6. Roll out the dough into about a 12x16-inch rectangle about 1/2-inch thick on a floured surface.
  7. Cut into 8 long strips. I like to use a pizza cutter to cut the dough.
  8. Cut the strips in half horizontally to make 16 strips.
  9. Twist strips or leave in strips.
  10. Place twist on prepared baking sheet.
  11. Repeat with remaining strips.
  12. Cover with greased plastic wrap, and let rise 20 minutes.
  13. Toward the end of the rising time, preheat oven to 350 F.
  14. Uncover, and bake 12-20 minutes or until golden brown.
  15. While breadsticks are baking, stir together granulated sugar and ground cinnamon.
  16. Brush bread sticks with half melted butter.
  17. Sprinkle with cinnamon sugar mixture.
  18. Drizzle remaining half butter over breadsticks.

Notes

  • Water temperature should be warm like a bath to activate yeast without killing it; avoid hot water.
  • Instant yeast can substitute for active dry yeast without proofing.
  • Use salted butter or add extra salt if using unsalted butter to maintain flavor.
