Cinnamon Buttermilk Muffins

Cinnamon Buttermilk Muffins are tender, moist muffins flavored with cinnamon and a buttery cinnamon sugar streusel topping. The recipe combines buttermilk and vanilla with flour, baking powder, cinnamon, and sugar for a balanced batter, baked initially at high heat for a domed top, then lowered to bake through. The streusel adds a sweet, crumbly texture contrast on top.

Description

The Cinnamon Buttermilk Muffins are created by combining a dry mix of flour, baking powder, salt, and ground cinnamon with a wet mix of canola oil, eggs, sugar, buttermilk, and vanilla extract. The batter is mixed just until combined to maintain a tender crumb. A cinnamon sugar butter streusel is prepared by cutting together sugar, cinnamon, and softened butter until it resembles coarse crumbs. After preparing the muffin tins, half the batter is spooned in, sprinkled with half the streusel topping, then topped with the remaining batter and streusel. Baking begins at a high temperature of 425ºF for 5 minutes to encourage muffin dome formation and then continues at 350ºF for 11-12 minutes, allowing the muffins to cook through without drying out. The warm spices and rich buttermilk flavor make these muffins flavorful and moist. They yield 14-16 muffins and deliver a tender interior with a sweet, crunchy topping.

Buttermilk adds moisture and acidity to activate the baking powder, contributing to a soft crumb. Variations in oil type or buttermilk substitution can influence texture and flavor. The initial high baking temperature step is important to form the characteristic muffin dome.

Ingredients

Servings

For the muffins:

  • 2 cups all-purpose flour 260 grams
  • 4 teaspoons baking powder 16 grams, aluminum free
  • 1 1/4 teaspoons salt 7 grams
  • 2 teaspoons ground cinnamon 6 grams
  • 1/3 cup canola oil 76 grams
  • 2 large egg
  • 1 cup granulated sugar 200 grams
  • 1 cup buttermilk 8 ounces
  • 2 teaspoons vanilla extract 10 grams

For the streusel:

  • 1/3 cup granulated sugar 67 grams
  • 3 teaspoons cinnamon 9 grams
  • 3 tablespoons butter at room temperature, salted

Instructions

  1. Preheat the oven to 425ºF.

Make the muffins:

  1. In a small bowl, combine the flour, baking powder, salt and cinnamon. Whisk to break any clumps.
  2. In a separate bowl, combine the oil, eggs, sugar, buttermilk and vanilla. Mix well.
  3. Pour the dry ingredients into the wet ingredients and mix just until combined.
  4. In a small mixing bowl, combine the sugar, cinnamon and butter, cutting it together with a fork until it resembles coarse crumbs.
  5. Spray 2 muffin pans with cooking spray or line with standard muffin cups. Fill 14-16 muffin cups half full of batter.
  6. Sprinkle half of the cinnamon-sugar mixture on over the muffin batter. Use the remaining batter to fill the muffin cups the rest of the way. Sprinkle the remaining cinnamon sugar butter mixture on top of the muffins.
  7. Bake for 5 minutes, then reduce the oven temperature to 350ºF (without opening the oven) and bake for an additional 11-12 minutes, or until the center of the muffin bounces back when you touch it. If you do the toothpick test, there should be a few moist crumbs on the toothpick.
  8. Allow the muffins to cool for 5 minutes, then remove them from the pan and allow them to cool on a wire rack.

Notes

  • You can substitute the canola oil with vegetable oil, melted butter, melted coconut oil, or melted shortening based on preference.
  • Starting the oven at a higher temperature helps the muffins develop a domed top and an appealing texture.
  • Store-bought buttermilk is preferred for its thickness; homemade buttermilk can be made by adding 1 teaspoon vinegar to a cup of half and half or milk and letting it thicken before using.
  • Calorie estimates are approximate and will vary based on specific ingredient brands and measurements.
