Description

The recipe begins by activating active dry yeast in warm water with sugar until foamy. A mixture of vanilla extract, egg, room temperature butter, and nonfat dry milk is added to enrich the dough. Flour is gradually incorporated with cinnamon, salt, and baking powder until a soft, smooth dough forms. Cinnamon chips are stirred in to distribute bursts of cinnamon flavor throughout.

The dough rises until nearly doubled, then is shaped into a log and placed in a greased loaf pan for a second rise just until the dough reaches about one inch above the pan's rim. Baking starts at 350°F with an initial 20-minute phase, followed by tenting with foil and continuing to bake until the bread develops a golden crust. The finished loaf offers a moist, gently sweet interior punctuated by cinnamon chips.

Room temperature ingredients help create an even dough temperature for optimal rising. Caution is advised to avoid overly hot water which can kill yeast. The bread pairs well with butter or cream cheese spreads and can be enjoyed fresh or toasted.

  • 1 cup water about 105 F, warm
  • 2 tablespoons granulated sugar
  • 2 ½ teaspoons active dry yeast
  • 2 teaspoons vanilla extract
  • 1 egg at room temperature, large
  • 2 tablespoons butter at room temperature
  • 2 tablespoons nonfat dried milk instant
  • 3-4 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup cinnamon chips

Instructions

  1. Add water, sugar, and yeast to the bowl of a stand mixer or to a large bowl. Stir.
  2. Let yeast mixture sit for 5-10 minutes, or until foamy.
  3. Stir in vanilla, egg, butter, and dry milk until combined.
  4. Stir in 2 cups flour, cinnamon, salt, and baking powder.
  5. Continue adding flour by 1/4 cup until a soft, smooth dough forms.
  6. Stir in cinnamon chips.
  7. Cover, and let dough rise until it's nearly doubled in size, about 60-90 minutes.
  8. Gently deflate the dough, and form it into an 8-inch log.
  9. Place the dough into a greased 8.5x4.5-inch loaf pan.  
  10. Cover the loaf with greased plastic wrap, and let the bread to rise until about 1-inch over the rim of the pan, about 30-40 minutes. Do not let the bread rise beyond that point.
  11. Toward the end of the rising time, preheat the oven to 350F.
  12. Bake the bread for 20 minutes.
  13. Tent lightly with aluminum foil.
  14. Continue baking for about 15-25 minutes, or until the crust is golden brown, and the interior of the measures 190F on a digital thermometer.
  15. Remove the bread from the oven.
  16. Let sit in pan for about 5-10 minutes.
  17. Remove from pan, and allow to cool to room temperature on a wire cooling rack. .

Notes

  • Use warm water that feels comfortable to touch and not hot to preserve yeast activity.
  • Room temperature egg and butter improve mixing and encourage a consistent dough temperature for rising.
  • Adjust the amount of flour as needed based on dough feel; not all flour absorbs equally.
