Description
Cinnamon Lover's Granola combines 6 cups of old-fashioned rolled oats with finely chopped nuts, light brown sugar, ground cinnamon, kosher salt, and optional ground flaxseed for additional nutrition. These dry ingredients are thoroughly mixed before adding a syrup made from neutral oil, honey, and vanilla extract, which evenly coats the granola to bind the ingredients and add sweetness and flavor.
The mixture is spread evenly across parchment-lined sheet pans and baked at a moderate temperature of 325°F. During baking, the granola is stirred once or twice and the pans are rotated to ensure even toasting and to prevent burning. The result is a crunchy, aromatic granola with cinnamon spicing and nutty texture.
Once cooled, the granola breaks into clusters suitable for sprinkling onto yogurt, eating with milk, or snacking by the handful. Adjustments such as increased brown sugar yield a sweeter profile, and flaxseed can be substituted with alternative high fiber or protein ingredients.
Ingredients
Granola:
- 6 cups rolled oats old-fashioned
- ½ cup light brown sugar or dark brown sugar, packed
- 1 cup nuts finely chopped, pecans suggested
- ¼ cup ground flaxseed optional
- 1 tablespoon ground cinnamon
- 1 teaspoon kosher salt coarse, use 1/2 teaspoon if using table salt
Syrup:
- ½ cup neutral oil or melted coconut oil
- ½ cup honey
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 325 degrees F. Line two half sheet pans with parchment paper and set aside. (See note below for baking both pans at once.)
- In a large bowl, combine all of the granola ingredients and toss or stir to evenly combine.
- In a liquid measuring cup or medium bowl, whisk together the oil, honey and vanilla until well-combined.
- Pour the syrup over the granola ingredients and stir until all the ingredients are evenly coated.
- Scrape half of the mixture onto each sheet pan. Spread into an even layer.
- Bake the granola for 15-25 minutes, stirring once or twice and rotating pans halfway through. Add additional time, if needed.
- Let the granola rest on the cookie sheet without stirring to cool completely. Once cooled, scrape off the pan into pieces and store in an airtight container. The granola will keep at room temperature, well-covered, for several weeks.
Notes
- Ground flaxseed is optional and can be replaced with hemp hearts, peanut butter powder, or another 1/4 cup of a high fiber/protein ingredient.
- To increase sweetness, add about 1/4 cup more brown sugar.
- If using two sheet pans, bake separately or place racks six inches apart and rotate pans during stirring for even cooking.
