Description

The muffins start with melting butter to incorporate into sugar, then eggs, vanilla, and buttermilk are mixed in before adding flour, baking soda, and salt.   • 6 tablespoons butter melted¹
  • 3/4 cup granulated sugar
  • 2 egg large
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat oven to 400 F. Grease a 12-cup muffin tin. Be sure to grease the entire muffin tin as tops will rise out of the cup. Set aside.
  2. In a large bowl, whisk butter and 3/4 cup sugar until well-combined.
  3. Mix in eggs and vanilla until combined.
  4. Add milk, and mix until incorporated.
  5. Stir in flour, baking soda, and salt.
  6. In a small bowl, stir remaining 1/3 cup sugar and ground cinnamon together.
  7. Add to dough, and fold in 2-3 times. You don't want it to be combined. Check out the picture above the recipe. 
  8. Divide batter among prepared muffin cups.
  9. Bake 15-25 minutes, or until muffins are golden brown.
  10. Let cool in pan for 5-10 minutes before removing.

Notes

  • Melt butter until mostly liquefied but not hot; whisk to finish melting before mixing.
  • Measure flour by weighing or spooning and leveling to ensure accurate quantity.
