Cinnamon Muffins
Description
The muffins start with melting butter to incorporate into sugar, then eggs, vanilla, and buttermilk are mixed in before adding flour, baking soda, and salt. To create the cinnamon flavor, a sugar and ground cinnamon mix is folded into the batter just a few times, intentionally leaving some swirl rather than fully blending, which adds a visual and flavor variation in each bite.
They bake at 400°F in a well-greased 12-cup muffin pan, allowing tops to rise prominently. The muffins develop a golden surface and tender crumb inside. Cooling briefly in the pan before removal helps maintain their shape.
Using properly measured flour is crucial for texture, and melting butter just until mostly liquefied avoids sizzling that could affect batter temperature. Both regular and low-fat butter are acceptable for this recipe.
Ingredients
- 6 tablespoons butter melted¹
- 3/4 cup granulated sugar
- 2 egg large
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup granulated sugar
- 1 tablespoon ground cinnamon
Instructions
- Preheat oven to 400 F. Grease a 12-cup muffin tin. Be sure to grease the entire muffin tin as tops will rise out of the cup. Set aside.
- In a large bowl, whisk butter and 3/4 cup sugar until well-combined.
- Mix in eggs and vanilla until combined.
- Add milk, and mix until incorporated.
- Stir in flour, baking soda, and salt.
- In a small bowl, stir remaining 1/3 cup sugar and ground cinnamon together.
- Add to dough, and fold in 2-3 times. You don't want it to be combined. Check out the picture above the recipe.
- Divide batter among prepared muffin cups.
- Bake 15-25 minutes, or until muffins are golden brown.
- Let cool in pan for 5-10 minutes before removing.
