Ingredients

  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cups sugar
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 cup peaches , peeled and thinly sliced

Instructions

  1. Preheat the oven to 325 degrees and butter and flour a 9x5 inch loaf pan.
  2. In a large mixing bowl whisk together eggs, oil, sugar, and vanilla extract until well blended.
  3. In a separate bowl sift together the flour, baking powder, baking soda, cinnamon, and salt.
  4. Add flour mixture to the wet ingredients and whisk until just combined.
  5. Fold peaches in by hand until just combined.
  6. Pour into the pan and bake for 55-60 minutes until a toothpick comes out clean.
