Cinnamon Quick Bread Recipe

This Cinnamon Quick Bread is a moist loaf featuring a swirl of cinnamon-sugar layered throughout the batter. The texture balances soft with a slight crunch from the cinnamon sugar topping, producing a subtly sweet and warmly spiced bread. It's suitable for breakfast or a snack, offering a comforting homemade baked good made without yeast.

Description

The Cinnamon Quick Bread Recipe combines all-purpose flour with buttermilk, egg, and vegetable oil to create a tender batter. A cinnamon sugar mixture is layered and swirled through the batter before baking, giving the bread its characteristic spiced ribbons. The bread is baked in a loaf pan lined with parchment, resulting in a golden crust and a soft, moist crumb inside. This bread balances sweetness from the sugar and warmth from the cinnamon without overpowering flavors.

Baking at 350 degrees Fahrenheit for about 45 to 50 minutes ensures the bread is cooked through, tested by a clean toothpick. Cooling it in the pan briefly before lifting it out helps maintain its shape and texture. This bread can be sliced and enjoyed plain or with butter.

Ingredients

Servings
  • 2 cups all-purpose flour
  • 1 1/2 cup sugar divided
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1 egg
  • 1/4 cup vegetable oil
  • 1 tbsp cinnamon

Instructions

  1. Preheat oven to 350 degrees. Line a 9x5" loaf pan with parchment paper. Set aside.
  2. In a mixing bowl, whisk together the flour, 1 cup sugar, baking soda and salt. In a separate bowl, combine the buttermilk egg and oil. Mix the wet ingredients into the dry ingredients just until combined. Batter will be slightly lumpy.
  3. In a small bowl, combine the remaining ½ cup sugar with the cinnamon.
  4. Spread ½ of the batter into the bottom of the loaf pan. Sprinkle ½ of the cinnamon sugar mixture over the top of the batter. Layer on the remaining batter over the cinnamon mixture. Sprinkle the remaining cinnamon mixture over the top of the batter. Using a knife, cut through the batter back and forth just 1 inch into the batter to swirl.
  5. Bake at 350 degrees for 45-50 minutes. Test with a toothpick - when inserted, the toothpick should come out clean and crumb-free.
  6. Let cool for 10 minutes in the pan. Using the overhanging parchment paper, lift the bread out of the pan. Let cool completely.
