Cinnamon Sugar Donut Muffins

Ingredients

Servings
  • 2 cups all-purpose flour
  • 1 1/2 cup sugar granulated white
  • 2 teaspoons baking powder
  • 1 1/2 teaspoon cinnamon
  • pinch nutmeg
  • 1/2 teaspoon salt
  • 1 egg
  • 1 1/4 cup milk
  • 2 tablespoons butter melted
  • 2 teaspoons vanilla extract

For the topping:

  • 1 tick butter melted
  • 1 cup sugar granulated white
  • 2 teaspoons cinnamon

Instructions

Get prepared

  1. Preheat the oven to 350F
  2. Line a mini muffin pan with paper liners.

Make the batter

  1. Mix flour, sugar, baking powder, cinnamon, nutmeg, and salt together in one bowl. 
  2. In another bowl, whisk together the egg, milk, butter, and vanilla.
  3. Add wet mixture to dry mixture, and fold in until JUST combined.

Bake

  1. Spoon the batter into the muffin tin wells, about 2/3 full.
  2. Bake for 15 minutes, until they spring back when lightly touched.
  3. Place on a rack to cool while you prepare the topping.

For the topping

  1. Add the melted butter to a small bowl.
  2. Mix together the sugar and cinnamon in a another bowl. 
  3. Dip each muffin first in the butter and then in the cinnamon sugar.
  4. Devour.
