Ingredients
Lentils:
- 1 1/2 cups black lentils uncooked
- 3 cups water cold
- 1 teaspoons salt
Salad:
- 3 cups Brussels sprouts shredded
- 1 cup orange segments or clementine segments
- 2 scallions chopped
- 1 cup strawberries sliced
- 1 1/2 cups apple shredded
- 1 -2 avocado sliced
- 2 Chili pepper optional, sliced
Orange Dressing:
- 1 clove garlic grated
- 2 tablespoons fresh herbs I used basil and oregano, minced
- 1 teaspoon honey
- 1/3 cup orange juice
- 2 teaspoons lemon juice
- pinch salt
- 1/4 cup olive oil
Notes
- For cooking lentils perfectly, make sure to read my tips and watch the video.
- Make sure to season your lentils before tossing the salad.
- This Lentil Salad can be made with warm or cold lentils. If warm, the strawberries and shredded Brussels sprouts might wilt a little.
