Description

This recipe uses a marinade combining olive oil, fresh citrus zest and juice from orange and lemon, crushed garlic, and fresh rosemary sprigs. The marinade coats ribeye steaks and is refrigerated for one to one and a half hours, allowing the citrus acids to mildly tenderize and infuse aromatic flavors. Frequent turning ensures even coverage.

Post marinating, the steaks are patted dry and grilled over charcoal or gas heat to desired doneness, developing a flavorful crust. The discarded marinade is boiled and simmered to safely use as a finishing sauce, imparting concentrated citrus and herb flavor. Ingredients

  • ½ cup olive oil
  • 1 orange zest and juice
  • 1 lemon zest and juice
  • 2 cloves garlic crushed
  • 2 prigs rosemary fresh
  • 24 ounces ribeye steak 2 12-ounce steaks, plural

Instructions

  1. Combine all the marinade ingredients in a resealable plastic bag.
  2. Add the steaks, turning to coat well.
  3. Marinate the steaks in the refrigerator for  1 to 1 1/2 hours, turning frequently.
  4. Remove the steaks from the marinade, pat them dry and cook on a charcoal or gas grill to your desired degree of doneness.
  5. While the steaks cook, pour the marinade into a small saucepan and bring it to a boil over medium-high heat. Reduce to a simmer and keep warm.
  6. Allow the steaks to rest for 10 minutes after removing them from the grill. Drizzle the finished steaks with some of the warm marinade before serving.

Notes

  • Zest the citrus fruits before juicing to ease preparation and avoid removing bitter pith.
  • Limit marinating time to one to one and a half hours to prevent the acidity from cooking the meat and causing a mushy texture.
  • Refer to a steak cooking temperature chart to grill steaks to your preferred doneness.
