Citrus Shrimp Ceviche

Citrus Shrimp Ceviche features cooked shrimp marinated in a blend of fresh lime, lemon, and orange juices mixed with diced grapefruit, oranges, cucumber, red onion, jalapeno, and cilantro. This chilled dish offers a bright, tangy flavor balanced with fresh fruit and vegetables, making it a refreshing appetizer.

Description

This ceviche starts with shrimp briefly boiled and shocked in ice water to stop cooking, preserving a tender texture. The shrimp then marinate in freshly squeezed citrus juices—lime, lemon, and orange—allowing the acids to impart flavor. Diced grapefruit and oranges add sweet, juicy notes, while cucumber provides crunch and red onion adds sharpness. Jalapeno pepper introduces mild heat balanced by the freshness of cilantro.

The result is a vibrant dish showcasing a combination of citrus flavors and fresh vegetables with tender but firm shrimp. Serving chilled enhances its refreshing, palate-cleansing qualities, suitable as a light starter or summer dish.

Garnishing with avocado adds creaminess to contrast the acidity. Preparing citrus segments as supremes adds visual appeal and texture. Using freshly squeezed citrus juice ensures bright, clean flavors.

Ingredients

Servings
  • 1 lb Shrimp no shells, raw
  • 1/3 cup lime juice
  • 1/4 cup lemon juice
  • 1/4 cup orange juice
  • 1 grapefruit peeled and diced
  • 2 orange peeled and diced
  • 1 cucumber sliced and diced
  • 1/2 red onion diced, small
  • 1 jalapeno pepper seeds and pith removed, fined diced
  • 1/4 cup cilantro chopped, leaves
  • salt to taste

Garnish

  • avocado

Instructions

  1. Bring a pot of water to a boil. While you're waiting for that, fill up a large bowl with ice and water and set aside.
  2. Place the shrimp in the boiling water and cook for one minute. Use a skimmer to remove the shrimp to the ice water bath. Once the shrimp have fully cooled, drain the water through a colander.
  3. Pour the lime juice, lemon juice and orange juice into a large bowl and add the shrimp. Give them a stir and place in the refrigerator for 20 minutes to marinate.
  4. Add the remaining ingredients to the bowl of shrimp and stir everything together. Garnish with avocado before serving.

Notes

  • Use freshly squeezed lime, lemon, and orange juices to ensure bright, clean citrus flavors.
  • Consider preparing citrus supremes to add texture and enhance the presentation.
  • Cook the shrimp briefly and immediately chill in ice water to maintain a tender, firm texture.
  • Serve garnished with avocado for a creamy contrast to the tangy ceviche.
