City Chicken

City chicken (or mock chicken) is an American dish consisting of cubes of pork meat placed on a skewer and then fried and/or baked.

Ingredients
- 2 lb pork , cut into 1 inch (2,5 cm) cubes
- salt
- 2 cups flour
- 3 eggs , lightly beaten
- 2 tablespoons water
- 2 cups seasoned italian breadcrumbs
- Frying vegetable oil

Instructions
- Preheat the oven to 350 F (175°C).
- Season the pork with salt and thread it onto the skewers.
- Arrange three deep dishes on the work surface, and fill the first with flour, the second with beaten eggs and the last with seasoned Italian breadcrumbs.
- Roll the pork skewers in the flour, dip them in the eggs, coating all sides, then roll them in the breadcrumbs.
- Dip the skewers again in the eggs and then in the breadcrumbs.
- In a large frying pan, heat a large volume of oil over medium heat and bring it to a temperature of 350 F (175°C), a temperature that must be maintained throughout frying.
- Dip the pork skewers and fry them until the meat is golden brown.
- Remove the skewers from the oil, drain them, place them in a baking dish and cover them with aluminum foil.
- Bake them for about 20 minutes, then remove the foil and bake uncovered for 5 minutes for a crispy breading.
Notes
- - In the absence of Italian breadcrumbs, add to a classic breadcrumb: 1 teaspoon of Italian spice mix, ½ teaspoon of onion powder and 1 teaspoon of garlic powder.
